Description

The knife santoku by Victorinox with a blade length of 17cm, is the Japanese version of the Chef's knife. It is slightly shorter, thinner, and has a flat blade. It is ideal for meat, especially for cutting bones, fish, and vegetables. It is less suitable for finely chopping herbs, but it is the best choice for thin slices of vegetables. It has a large blade and a surface that helps prevent food from sticking during cutting, while the curved tip aids in slicing. It is made of stainless steel, a popular material for knives, it is particularly durable and does not corrode. It is a combination of carbon and iron as a base, and chromium is added to repel stains and give the blade a glossy finish.

Owner of this knife for about 1.5 years. It has endured 3 months of daily full-time work and 1.5 years of student apprenticeship. It performed exceptionally well at school (I sharpened it twice towards the end of my studies) but - from the second month onwards - almost daily. It cuts very quickly and easily. However, because the blade is not curved, it is not convenient for fast, fine chopping for several minutes, resulting in quick fatigue.
