Leafy spring vegetable whose leaves and stems are eaten and is a key ingredient in the most popular boiled summer salad. Amaranth is propagated by seed. We sow the amaranth seed in late April to early May, as amaranth prefers the warm days of summer to germinate and grow. They want relatively regular watering during their growth, and when fully grown, they are more resistant to lack of watering. Harvesting begins 30-40 days after sowing and is best done early in the morning so that the foliage is cooler and tastier in cooking.
